Baked Marsala Chicken Breasts

  1. Dry chicken breasts with paper towel. Dredge in flour, eggs, and breadcrumbs. Heat olive oil in skillet. Cook chicken about five minutes each side. Place in baking dish. Preheat oven to 375 degrees. When pieces are done and arranged, pour choice of wine over chicken. Roll lemon with hand on hard surface (releases juices) Zest half of Lemon. Cut lemon in half and mix zest in with half a lemon - pour over all chicken. Cover with foil. Bake for about 25 minutes. Chicken will be tender and flavorful.
