  1. Grate cucumber, place in a strainer and squeeze out as much liquid as possible.

  2. Hint: I will do this, wait 10 minutes and do again for optimum results

  3. Put in a medium bowl and mix with the other ingredients.

  4. Let sit for at least 1 hour. Add salt and pepper to taste then let sit for at least 2 hours.

  5. Prepare the night before for the best flavor!

  6. Garnish with fresh parsley

  7. Serve with Spiced Pita Chips or Grilled Greek Chicken


We are Garlic lovers! There I said it. When I made this for the first time, I mostly tasted the tang of Greek yogurt. That little added garlic, salt and pepper (especially the pepper) added such a depth to the sauce. I served it with heavily seasoned mediterranean chicken and the marriage was amazing - a burst of flavor in your mouth with the smoothness and coolness of cucumber.
