St. Patty’s Corned Beef

  1. Boil corned beef in large pot - without spices - for 2 hours

  2. Preheat oven to 425º

  3. Cut red potatoes into ½ " pieces

  4. Cut cabbage into 6-8 pieces

  5. Mix brown sugar, dijon mustard and honey (in that order) in large mixing bowl

  6. Remove corned beef and place in center of large baking pan

  7. Surround with potatoes

  8. Wedge in cabbage pieces

  9. Pour sugar mixture ONLY over the corned beef

  10. Cover with tin foil and bake for 15 minutes

  11. Reduce oven to 350º and bake for 1 hour and 15 minutes.

  12. Do not open over or lift tin foil until done.

  13. Serve immediately
