  1. Cut off hard green ends and root end of Leek

  2. Make one cut lengthwise

  3. Slice Leeks about ⅛" width discs

  4. Put in colander and wash thoroughly

  5. Pat dry pieces with paper towel

  6. In a large oven safe saucepan, melt butter

  7. Add cut leek pieces and saute on medium low until tender

  8. While leeks are sauteeing, cut small potatoes into quarters (bite size pieces)

  9. Add to pan, stir around getting potatoes very wet.

  10. Place in oven and bake for 45 min - to an hour - until the potatoes are tender.

  11. Salt & pepper to taste

  12. Serve immediately
