Leeky Potatoes

Cut off hard green ends and root end of Leek

Make one cut lengthwise

Slice Leeks about ⅛" width discs

Put in colander and wash thoroughly

Pat dry pieces with paper towel

In a large oven safe saucepan, melt butter
-
Add cut leek pieces and saute on medium low until tender
-
While leeks are sauteeing, cut small potatoes into quarters (bite size pieces)
-
Add to pan, stir around getting potatoes very wet.

Place in oven and bake for 45 min - to an hour - until the potatoes are tender.

Salt & pepper to taste

Serve immediately
