Homemade Pesto

Ingredients
  • 1 cup packed Basil leaves (stem and all)
  • 1/3 cup Pinenuts (can substitute walnuts)
  • 1/3 cup Romano Pecorino cheese (grated - I use Locatelli)
  • 1/4 cup Extra Virgin Oil (Adjust to desired smoothness)
Instructions
  1. Place all ingredients in a food processor.

  2. I use a Magic Bullet for this, it's small enough and so easy to clean and store.

That's it! So easy and so flavorful. No added stuff - just pure flavor.

I have served this over meats and poultry, in pasta (hot and cold) and even with my cheese platter. If you are feeling a little creative – you can add this to a base of mayo/sour cream/hummus to make a dip with veggies. A little goes a very long way.. this recipe is packed with flavor!
