Best Meatloaf Ever

Ingredients
  • 1 1/2 pound Chop meat (80-85% fat - best blend is a brisket and chuck80-85% fat - best blend is a brisket and chuck)
  • 2 Large Eggs (lightly beaten)
  • 1/2 tablespoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1/2 tablespoon Italian Seasonings
  • 1 tablespoon Worcestershire Sauce
  • 1/4 cup Ketchup ((good quality) + some for coating)
  • 1/4 cup Romano Cheese ((I love Locatelli))
  • 1 - 1 1/2 cup Seasoned Breadcrumbs ((I love 4C))
  • 1/4 - 1/2 cup Chicken Stock ((preferably organic))
  • Avocado or Olive Oil
  • Salt and Pepper (to taste)
Instructions
  1. Preheat oven to 350º
  2. In a large bowl - mix first eight ingredients together gently with your hands Alternate breadcrumbs and chicken stock mixing half at a time until consistency is moist but firm
  3. I add about ¼ tsp each of salt and pepper
  4. Coat cookie sheet/flat pan or loaf pan with oil of choice
  5. Shape meatloaf into a flat bottom football and place on pan
  6. Coat entire meatloaf with ketchup - sealing it
  7. Bake 30 minutes until ketchup a little crusty on bottom of pan
  8. Cover with tin foil and let sit at least 5 minutes before serving
