Baked Clams

Ingredients
  • 2-6 ounces Clams (chopped)
  • 1 Medium Onion (chopped fine)
  • 1 Small Red Pepper (chopped fine)
  • 1 stick Butter
  • 2-4 tablespoons Clam Juice
  • 1/4 - 1/2 cup Breadcrumbs
  • 2 Lemons (wedged into small pieces for serving)
  • Salt and Pepper
  • Real or aluminum clam shells
Instructions
  1. Add butter to saucepan and heat on low until all butter has melted (not burned)
  2. Increase heat to medium and add peppers - sauté for 2 minutes
  3. Add onions - sauté until soft and translucent
  4. Add clams - sauté 2 min until heated through
  5. Add breadcrumbs and clam juice to desired consistency
  6. Add salt & pepper to taste
  7. Fill clam shells and serve with lemon wedges
