Asian Ginger Carrot Dressing

Ingredients
  • 1/4 cup Onion (minced)
  • 1 tablespoon Fresh Ginger (minced)
  • 1 clove Small Garlic
  • 1 tablespoon Celery (minced)
  • 3 tablespoons Peanut Oil (or sesame oil)
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Water
  • 1 tablespoon Tomato paste
  • 2 teaspoons Low sodium soy sauce (use tamari for gluten-free)
  • 1 1/2 teaspoon Raw sugar
  • 1 teaspoon Lemon juice
  • Salt and Fresh Ground Black Pepper
Instructions
  1. Place all the ingredient in a food processor or emulsifier and blend until smooth. Refrigerate a few hours before using to let the flavors deepen. This gets better the longer it sits.
